SALMON WITH GARLIC SAUCE AND LEMON OIL

This dish requires minimal ingredients, but its taste captivates many gourmets. 

This salmon is a decent dish in a restaurant that can be made at home as well.


INGREDIENTS:

• 180 g fillet of salmon without skin (about 2.5 cm thick)
• Salt and ground black pepper
• 2 tsp. olive oil
• 2 cloves of garlic
• 1/4 cup chicken broth
• 2 tbsp. fresh lemon juice
• 3 tbsp. + 1 tsp unsalted butter, diced in 1 tbsp.
• 1/2 tsp. honey
• 2 tbsp. chopped fresh parsley
• Lemon slices for garnish (optional)


COOKING METHOD:
 
1. Remove the salmon fillet from the fridge and let it rest at room temperature for 10 minutes.
2. In a small saucepan, melt 1 tsp. oil over medium heat. Add the garlic and bring it to a slightly golden brown (about 1 to 2 minutes). Pour chicken broth and lemon juice. Let the sauce boil until it is halved (about 3 minutes). Mix the resulting with butter and honey and whisk until combined. Put the sauce aside.
3. Wipe both sides of the salmon with dry paper towels, wipe both sides with salt and pepper. Heat the olive oil in a non-stick frying pan over medium heat. After the oil has warmed up, add the salmon and fry for about 4 minutes on one side until golden brown, then turn and fry the salmon on the opposite side until it is dry (about 2 to 3 minutes longer).
4. Put the fried salmon on a dish and pour over the sauce generously. For beauty, you can decorate it with slices of lemon and parsley. Serve immediately to the table.
