JAM  MADE  FROM  PINE  CONES 

  Recipe

This jam is a real delicacy. In addition, it is also very useful, especially in the cold season. It is recommended to eat no more than 1 cone a day. And the syrup from this jam can be used even for children and pregnant women to prevent colds.

INGREDIENTS

    1 kg -  pine cones
    1 glass - Sugar
    1 pinch - Cinnamon
    1 pinch - Vanilla sugar


PREPARATIONS

1. - Go through the bumps. I recommend using rubber gloves, otherwise it will be difficult to wash your hands later. In a pot with a thick bottom, fill the cones with water so that it completely covers them. Bring to a boil and cook over low heat for 40 minutes.

2. - Leave the lumps in this broth for 12-14 hours.

3. - Set aside the cones separately, drain the broth.

4. - Add sugar, vanilla sugar, and cinnamon to the syrup. Cook over low heat for 1.5 hours.

5. - At the end of cooking, the syrup will get a beautiful reddish color.

6. - 15 minutes before the end of cooking, return the cones to the pan and cook the jam.

7. - Spread out on banks.

Bartender's day is an excuse to run into a bar tonight for a glass of good mood. Especially if  it is Monday, or you just have a tough day. History  - a few words about history (just a few, so as not to torment you with boring facts from the past). It is on February 6 that the Catholic Church has been celebrating the Day of Remembrance of Saint Amanda for many centuries in a row - a monk and missionary, patron saint of winemakers, brewers and, in general, all workers of the alcohol industry.










The modern public was too lazy to come up with a new date to celebrate the Day of the Bartender. Therefore, February 6 is as many as 2 holidays at once. Although, the bartenders have practically nothing in common with the saint. Who are usually bartenders - people who came to study in a large (or foreign) city. And since money is always needed (you cannot live just with one scholarship), a person starts looking for alternative earnings, so that without qualifications. So they become bartenders. Although, there are also those whose profession is called "bartender". For the latter, a bar and alcohol is not a job, but a whole style and way of life, a mentality - "Guests"










The right bartender is the one who understands that not clients come to him (like in a hairdresser's), but guests. Therefore, you need to meet them with dignity, or at least with a smile / good mood. And by the way, for the same reason, bartenders do not have a rule “the client is always right”. Not that guests are denied a drink, but they can afford free advice (a la "this will be a bad cocktail", or "You'd better have coffee, not vodka"). In especially dangerous cases, the bartender may even declare that he does not prepare such a cocktail, or there are no necessary ingredients. Psychology Man comes to bars for a reason. Especially if he's alone. One needs to be able to read, understand, and abstract (if he begins to load with his problems). Why isn't psychology to you ? 





True, there is one “but”, the main rule of all bartenders:

"You should never talk about religion and politics with any of the guests." Alcohol Among bartenders there are both drinkers and not so much. The latter, in the vast majority of cases, simply tied up (as a rule, they got drunk, or tired). Drinking bartenders are also not uncommon. True, such at work have to be extremely attentive and careful. After all, it often happens that the client wants to treat him with a drink. Refusing is impolite. But if there are 40 such clients ... Health - most often, bartenders suffer from: drunkenness (see the previous point); varicose veins (the result of an 8-hour working day of standing on your feet). 















Specializations -  Alcohol

Bartenders have 2 specializations: classic and flaring. In the first case, everything corresponds to the regulations: cocktails are prepared strictly according to the recipe, without a single extra drop - for the sake of the right taste. Flaring is more of a spectacle than the art of mixing delicious ingredients.
These are most often found in clubs.





There is also a third specialization - mixology. Such a bartender, without even trying the cocktail, will be able to determine its taste (by ingredients). These are needed in places where guests like to experiment, or just drink something unusual. -  It all depends on the bartender himself and the management of the establishment. Often, managers come up with all sorts of punishments for being late, or some other violation of the "work charter".





But this moment is not fundamental. It is much worse when a sour cocktail, a spoiled product, or a broken glass is handed out to the guest. This can damage the reputation of not only the bartender, but the entire institution.





 TOP 5 COCKTAILS 

1. DRY  MARTINI  - This dry martini cocktail has been known for almost a hundred and fifty years. The first mention of him appeared in 1862 in the "Bartender's Handbook" by Jerry "The Professor" Thomas. According to legend, it was this bartender who invented it in exchange for a gold nugget. And according to another legend, he received his second name from the hands of President Roosevelt himself. In front of the television cameras in 1933, he prepared a "Dry Martini Cocktail", thereby marking the end of Prohibition in the United States. 

 COMPOSITION:

70 ml Beefeater gin 15 ml any dry vermouth 4-5 drops of orange bitter (optional) Lemon twist for garnish.

HOW  TO  PREPARE :

 Add all ingredients to a mixing glass and cover with crushed ice. Stir well until well cooled and strain into a chilled cocktail glass. Decorate with a lemon twist.





 2. DEATH  IN  THE  AFTERNOON 

This hazy combination of absinthe and champagne was invented by Ernest Hemingway. He will put the hair on his chest on end and put the thoughts in his head in order.

 INGREDIENTS : 

40-45 ml absinthe 130 ml chilled champagne 

HOW  TO  PREPARE : 

Pour absinthe into a flute glass. Add champagne.






 3. VODKA  MARTINI 

- Among all the classic alcoholic cocktails, Vodkatini occupies a special place; for its preparation, it is enough to correctly mix the martini with vodka. It was this cocktail that the well-known British intelligence agent James Bond loved.

INGREDIENTS :

 75 ml of vodka, 15 ml of dry vermouth, 1 green olive and 1 lemon wedge. Add a drop of orange bitter or angostura if desired.

HOW  TO  PREPARE: 

Shake in a shaker with ice for 30 seconds. Pour into a chilled martini glass and garnish with olive or lemon.





4. MOJITO

 Originally from the island of Cuba, became popular in the United States in the 1980s. The cocktail is included in the list of "modern classics" of the International Bartenders Association (IBA) .. 

INGREDIENTS :

 2 tsp sugar, a bunch of mint, 75 ml soda, 1 lime, 60 ml rum.

HOW  TO  PREPARE: 

 put sugar and a bunch of mint in a tall glass, then pour 50 ml of soda. After that, the lime cut in half is squeezed into the glass, after which the second half of the fruit is placed in it. Then rum is added. Mix, fill a glass with ice and pour some soda again. Decorate with a sprig of mint.






 5.  BLOODY  MARY 

alcoholic cocktail based on vodka and tomato juice. Included in the number of official cocktails of the International Bartenders Association (IBA), category "Contemporary Classic". 

INGREDIENTS: 

vodka (chilled) - 50 ml tomato juice (not chilled, thick) - 100 ml lemon juice (freshly squeezed) - 15 ml salt and pepper - 2 pinches each Tabasco and Westchester sauces   - 2-3 drops each

HOW  TO  PREPARE :

Option 1: 
mix all the ingredients in a shaker and serve with a straw.

Option 2: 
pour salt and pepper into the bottom of the glass (glass), drip sauces, lemon juice and pour tomato juice. Using the blade of a knife (or a teaspoon), slowly pour the vodka onto the side of the glass, trying not to mix the layers. Sometimes, at home, the cocktail is simplified using only spices, salt, tomato juice and vodka. This variant is especially common in the countries of the former USSR and has a prefix in the name - "in Russian".

CRISPY POTATO SPIRALS

Crispy on the outside and very tender on the inside, the spirals can be a great snack for a fun company.

INGREDIENTS :

Boiled potatoes - 350 g
Egg - 1 pc.
Milk - 50 ml
Hard cheese - 20 g
Vegetable oil - 500 ml
Potato starch - 10 g
Salt
Pepper





PREPARATION :

Mash the potatoes. Add egg, milk, cheese, starch, salt and pepper.





Mix everything and transfer to a pastry bag. Pour oil into a frying pan and heat to 180 degrees. Gently squeeze the puree in a spiral shape into a hot deep fat.




Fry for 10-15 seconds on each side until golden brown. Transfer the hot spirals to a paper towel in a plate




The finished dish can be sprinkled with cheese and garnished with green onions.
