COUSCOUS WITH CORN,h_416,c_fit,fl_progressive,q_95/v1/img/recipes/21/17/81/picduqKkg.jpg



    1 1⁄2 teaspoons butter or 1 1⁄2 teaspoons olive oil
    1 shallot, minced
    1 cup chicken broth or 1 cup vegetable broth
    3⁄4 cup couscous
    1⁄3 cup fresh corn or 1⁄3 cup thawed frozen corn
    1⁄4 teaspoon pepper
    1 pinch cayenne (optional)
    1⁄8 teaspoon salt


    Melt butter in saucepan.
    Add shallot and saute 1 to 2 minutes, or until tender.
    Add chicken broth and bring to a boil.
    Add couscous, corn, pepper, cayenne and salt.
    Cover; remove from heat and set aside 5 minutes.
    Fluff with a fork.
